Recently I’ve been creating various popsicles for my little great nephews and nieces as a healthy treat or after dinner dessert. So far, they have loved every single one! Here is a new recipe including some of their favorite fruits and berries. It is free of preservatives, fillers and thickeners. Everything is organic, fresh and healthy.

Pasqualina’s Popsicle

2 cups almond milk (can substitute with coconut milk or a combination of both)
1 cup organic fresh blueberries
1/2 cup organic fresh cherries, pitted
1 peach, peeled, cut in half, pitted and sliced
1/2 cup Cocojune organic cultured pure coconut yogurt
1 banana
1 tablespoon maple syrup or honey
Directions
Place all ingredients into a blender or food processor and mix until smooth. Evenly divide the mixture between molds, making sure to leave about 1/4” of space at the top of the mold to allow the popsicles to expand in the freezer. Insert popsicle sticks and freeze for 5 to 6 hours.
Remove from freezer and run molds under warm water to help the popsicles loosen.

About the fruits and berries….
First, in case you were wondering, all berries are fruit but not all fruits are berries 🙂
Blueberries, cherries, and peaches are considered “superfoods” due to their numerous health benefits and nutritional profile. They are low in calories, high in fiber and full of antioxidants, and my 5 loves adore every single one!
Bananas are loaded with vitamins and minerals and is easy to digest.
Coconut Yogurt has been shown to aid in digestive health, but not all coconut yogurt is the same. We use Cocojune yogurt.
