Special Treats For A Special Birthday!

For my Uncle Tony's special Birthday Bash, I made one of my very favorite Jacques Pepin pastry recipes, Cream Puffs filled with fresh homemade whipped cream. They can also be filled with pastry cream or make a smaller version and turn them into profiteroles, filled with ice cream and topped with melted dark chocolate!

To make Chef Pepin's recipe into a gluten-free version, simply substitute 1 cup of all-purpose organic flour with 3/4 cup of gluten-free all-purpose flour along with 1 1/2 teaspoons of baking powder and 1/2 teaspoon baking soda, all sifted together, then follow recipe directions.
