During lockdown in 2020, we created the “Family QuaranTeam” and the development of gluten-free traditional family recipes to share with family and friends. Meals that you can prepare for a special day, family time, or simply when you feel like cooking food that comforts your soul.
Easter or “Pasqua” in Italian has always been one of my favorite holidays for so many different reasons - the colors, the festivities, the gathering of family and friends, and the traditions. It is also very special to me because I was named after my Grandmother Pasqualina and our name means “a child of Easter.”
These delectable dishes were created by memory and emotions because nothing was ever written down in Italy so recipes did not exist. Instead, I followed family members in the United States and Italy with pen and paper to develop recipes that are clear on both ingredients and measurements – an exceptionally challenging but entertaining task and continues to be an enlightening experience for which I am incredibly grateful. These recipes were made with love and stem from a commitment to keep my family’s recipes and traditions alive, the gluten-free way.
'Pasqualina’s Table, Our Italian Family Traditions …The Gluten-Free Way' includes some of my favorite Easter dishes such as my Mamma’s traditional Roasted Lamb with Potatoes and ‘Pastiera di Grano’ or Easter Pie, two amazing and delectable dishes that must be present for the Easter Sunday spread!
